DIPLOMA IN INTERNATIONAL PATISSERIE AND CONFECTIONERY

Our six-month diploma program in Baking & Patisserie is a part-time, intensive, hands-on program designed for culinary enthusiasts who want to gain an in-depth knowledge and understanding into the art of making baking, confectionery and pastry items. The students predominantly are trained to be proficient in making everything from cookies to desserts, celebration cakes, tarts and decorative confectionery-based showpieces. After spending 550 hours (2.30 pm to 6.30 pm on weekdays) in kitchen & classrooms, the students will further master over 130 recipes and techniques. After a successful completion of the course and formal examination process, a UK-certification will be provided to you, by the renowned London-based accreditation board called City & Guilds.

Our 10-week Level 2 Award program in Culinary Skills is a part-time, intensive, hands-on program designed for culinary enthusiasts who want to gain and gather adept knowledge of all aspects of the culinary world.  The commencement of the program will witness a theory class keeping in mind HACCPS (Hazard Analysis Critical Control Point), Kitchen Safety and Hygiene. After this, the program involves a wide variety of hand-on sessions starting from the scratch including knife skills, stock, soups , spices and mother sauces. The students will be practicing butchering and filleting among other ways of treating meat. In terms of cuisines, candidates learn Basic Chinese, Lebanese, Mexican, Continental (English and French), Italian and Basics of Bakery.  Towards the end, the students also gain excellent exposure through a Special Celebrity Chef class followed by a wine and cheese/ bar tending workshop. Hence, ensuring that the students have built a strong foundation throughout  while advancing in various aspects of the culinary world. After the completion of this program followed by a practical examination, a level 2 culinary award course certificate will be provided to the students by the globally-renowned authority : CTH (Confederation of Tourism and Hospitality).
